The author of a recent paper writes that even though the saturated fat levels in today's diet has decreased over the last few decades, the ratio of omega 6 to omega 3 is 20:1 or even higher. This ratio parallels a significant increase in the numbers of people that are overweight or obese. According to the author, he explains that fatty acids have different effects on adipose tissue process and inflammation. The levels of obesity increases as the ratio of omega-6 to omega-3 gets larger, while high levels of omega-3 decreases the levels of obesity. He goes on to explain that the ratio of omega-6/omega-3 is important for overall health and prevention and management of obesity.
